7 months, schools out, and a new freezer menu!




Today marks our seven month DTE (Dossier to Ethiopia) anniversary! I know I always say this, but in some ways it has flown by and in others it seems like forever. We're still thinking that it will be quite some time before a referral comes and we see our sweet boy's face so we are praying for an outpouring of patience as each month gets a little bit harder! I'm not sure that we've mentioned this before, but there is a rainy season in Ethiopia that just started. Due the the rain, the courts close in August and September. Therefore, if we don't receive a referral before then we will be waiting until afterward. We continue to know that God has a plan for our family and we trust Him in it! We also found out this week that someone close to us has decided to adopt from Haiti! How awesome is that?? They already have a picture and she is the most sweet and precious little girl ever. We are so excited!!! Praise God for giving these kids a forever home.

Another exciting thing about our seven month is that SCHOOL IS OUT FOR SUMMER!! If you can't tell, I am extremely excited about it. We have some fun summer plans that involve visiting the grandparents and having fun at home. I won't lie and say that God is really working on me and "change." Even when it's good change. Every summer and fall is a big adjustment in family schedule. We have to get a new routine and get used to a different schedule and then before we know it we are doing it again. I"m not complaining about the summer, but am saying that I always pray for smooth transitions!

Now, on to freezer cooking! Abby Garman and I decided to cook that day after school was out. That was a Friday. That meant we would have all four children with us while we cooked all day. I can honestly say I've never done a freezer cooking day with four children all day. However, seeing as how I wasn't feeling great that day, AND four kids under the age of 5, I think we did a pretty good job!! It really was a fun time and we came out with a freezer FULL of food. Gotta love that right? Below are the meals and a few extra breakfast items we decided to put on our menu.

Pumpkin Chocolate Chip Muffins (thank you Abby because these are delicious!)
Betty Crocker Waffles
Cornbread Casserole
Spaghetti Sauce
Philly Cream Cheese Pot Pie
Orange Chicken
Tater Tot Casserole (thank you OnceAMonthMom)
Chicken and Rice (mom's recipe of course!)
Mom's Enchiladas (our husband's personal favorite)
Angel Chicken
4 bags each of marinaded chicken for grilling purposes
2 bags each of extra taco meat
1 bag each of extra chicken
